Why Buy a Turkey that’s too big….

We are definitely not the only farmers to recommend you buy a Turkey that is too much meat for one day! That’s because there’s nothing better than a Boxing Day meal, made out of your Turkey leftovers…

Whilst we know some very tasty Turkey leftover feast ideas – we want to hear some new ones! So if you have some different leftover ideas – please send them to us and we will test them out. 

We specifically remind people when they’re buying their bird to counter in extra weight for leftover meat – so that’s 500g per person to make sure there’s plenty left. It’s criminal to throw away uneaten meat on the plate…put it aside and throw it into your recipe the next morning!

The holidays have become much more American, where eating is an all day affair. So we are starting with a perfect Lunch.

The Turkey Tower Sandwich

For this a soft bread is best – go for a Tiger Loaf, thickly cut. Mayonnaise before you begin building. It’s best to have thinly sliced breast meat for this to avoid collapse, but just use what you have. Look around the kitchen and collect the leftovers…now chuck them in. Top it with a (generous) helping of cheese, and grill for a minute to melt. Finish with a dollop of cranberry, and heat up a dish of gravy for dipping. This sandwich isn’t for the faint-hearted.

A Mean Turkey Curry

What you will need:

  • Leftover Cooked Turkey. Dark or white meat or both
  • 1 teaspoon of cumin
  • Half a teaspoon of chili powder
  • 1 teaspoon of turmeric powder
  • 4 cloves crushed of garlic (optional)
  • 2 cloves of green cardamom
  • 1 bay leaf
  • 2 inches of root ginger, grated (optional)
  • 5 tablespoons vegetable oil
  • 1 onion, chopped in to small pieces
  • 2 tomatoes, chopped
  • 4 teaspoons of fresh, chopped coriander
  • add salt to taste
  • few drops of lemon or lime juice

How to prepare you curry:

Heat the oil on a medium heat

– Add the cumin, cloves, cardamom, and bayleaf until it crackles

– Add garlic and ginger and stir the mixture until it goes golden brown

– Add the chopped onion and stir until golden brown

– Add powdered spices, stir and then add chopped tomatoes

– Add 50 ml of water and cook it on a slow heat until it becomes a thick curry, then add diced turkey and lemon juice.

– Serve with either rice or bread.
